1 C sugar
1/4 C water
1/4 t cream of tartar
dash of salt
3 large egg whites
1 t vanilla extract

Directions:
Directions:
Combine first five ingredients into a double boiler; place egg white mixture over barely simmering water in bottom of double boiler on cooktop. Beat at high speed until stiff peaks form and candy thermometer registers at 160º. Add vanilla and beat until blended.
