Southwest Chicken Strips (You can use Tyson, or make your own. SEE BELOW for Emeril's recipe for Southwestern Seasoning)
2 Tablespoons olive oil
3 bell peppers (red, green and yellow)
2 large onion
1 16 oz jar Sun-dry Julienne Cut Tomatoes wit Herbs (in olive oil) (These are usually in the produce section)
1 pkg of Tomato Basil Feta Cheese crumbled
1 pkg of pine nuts
2 cdups shredded mozzarella cheese
1 box bowtie pasta

EMERIL"S SOUTHWESTERN SEASONING
2 Tablespoons chili powder
2 teaspoons ground cumin
2 Tablespoons paprika
1 teaspoon black pepper
1 Tablespoon ground coriander
1 teaspoon cayenne pepper
1 teaspoon crushed red pepper
1 Tablespoon salt
1 Tablespoon dried oregano

Directions:
Directions:
Boil pasta until done but not too soft.

Put 2 Tablespoons olive oil in bottom of pan. Add bell peppers and onion and stir fry until edges become clear. Don't overcook.

Mix bowtie pasta, bell pepper and onion mixture together. Add chicken strips, sun Dry Tomatoes, tomato basil feta cheese, pinenuts and mozzarella cheese and mix together. Makes a very large bowl.
