3-4 large bananas, 1 regular box vanilla wafers, 7/8 cup sugar, 4 tbsp. flour or 2 tbsp. cornstarch, 1/8 teaspoon salt, 3 1/4 c. milk, 4 eggs, and 1/2 tsp. vanilla.

Save 2 eggs whites for meringue. Beat remaining eggs with fork or whisk and set aside. Mix together sugar, flour, and salt in a saucepan. Add milk and stir. Wire whisk works well to keep from lumping. Cook on med-low heat until hot. Add eggs and cook until thick enough for pudding, stirring constantly. (A flat end wooden spoon works well to keep from sticking. If it is sticking on bottom too much, you may need to lower the heat.) When ready, remove from heat and mix in vanilla. Layer in 2 1/2 - 3 qt. baking dish: pudding, bananas, and wafers. I try to begin and end with small amount of pudding. Leave enough room at top for Meringue.
Meringue: for every egg white use 1 tbsp. sugar. Beat 2 egg whites until they stand in peaks, add 1/8 tsp. cream of tarter (optional). Gradually beat in 2 tbsp. sugar. Add 1/8 tsp. vanilla if desired. Beat until stiff and glossy. Spread on pudding. Bake at 400º for approximately 3 minutes, or until lightly browned.
