1 loaf brioche cut in 1/2 inch cubes, 4 c. heavy cream, 1 1/2 c. brown sugar, pinch of salt, 3 large eggs, six egg yolks, 2 tbsp. brown sugar, and 3 bananas very ripe.

Preheat oven at 350º. In a sauce pan, add cream, 1 c. brown sugar, and a pinch of salt. Bring to simmer over medium heat. Whisk eggs and yolks in a lg. bowl in a slow stream pour hot cream mixture into eggs Strain through mesh strainer over bread crumbs. Let it set for 10 mins. In a bowl, mash bananas 1/2 c. brown sugar. Fold bananas into bread transfer to 8 by 11 baking dish. Sprinkle 2 tbsp. brown sugar. Cover with foil. Bake 350º after 15 min. remove foil and bake 15 min. more or until top is golden brown.
