1 1/2lbs ground beef
1 onion finely chopped
garlic powder to taste
salt and pepper to taste
1 (14.5 oz) can diced tomatoes
1 (1.25oz) package taco seasoning
3/4 cup hot water
1 (11oz) can whole kernel corn, drained
1 (8.5oz) package corn muffin mix
1 cup shredded cheddar cheese

1. Preheat oven to 400º. Spray 9x13 in baking dish with cooking spray.
2. Place beef and onion in skillet over med heat. Cook until beef is brown and onion is tender. Drain grease, season with garlic powder, salt and pepper. Mix in tomatoes and cook for 5min. Stir in taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5mins until thickened. Transfer to prepared baking dish, and top evenly with corn.
3. Prepare corn muffin mix according to package directions (except for baking part). Spread evenly over the corn layer in baking dish.
4. Bake 20min, or until puffed and golden. Garnish with cheese.

I had to put this in a smaller sized casserole dish, the 9x13 was waaaay too big. We used ground turkey instead of beef, and it was still excellent. Definitely a repeat!
