1 2/3 cup dried Tortellini
¼ cup Butter
½ Cup Chopped bell Peppers
½ Onion
3 chopped Garlic
2 cubes Basil
¼ Cup Flour
¼ teaspoon Pepper
1 teaspoon Salt or to taste
1 ¾ cup cream or milk
One packed cup Shredded Mozzarella, Swiss, feta etc
¼ cup Grated Parmesan or Romano
6 Baby Potatoes cut in half
½ package frozen Asparagus
1 Can Artichokes
Greens for Salad
¼ Cup Balsamic Vinegar

Directions:
Directions:
Boil Potatoes in 3-quart saucepan until almost done. Remove them and set them aside. Boil asparagus in same water for a few minutes until almost done. Set aside with potatoes. Parch Peppers in same water and put them aside with potatoes and asparagus.

Cook Tortellini in same water for 18 minutes.
While tortellini is cooking, put ¼ cup Butter in pan and cook Garlic and Onions in butter for 3 minutes. Stir in Flour, Salt & Pepper.& Basil Cook, stirring constantly, until mixture is bubbly; Remove from heat. Stir in Cream or milk. Heat to boiling, stirring constantly. Boil and stir l minute.

Remove from heat.

Stir in Mozzarella & Swiss cheeses until melted. Add Tortellini, Asparagus, Potatoes, Peppers, and Artichokes. Add small amount of Balsalmic Vinegar and Sprinkle with Parmesan Cheese
