Flaky Pastry:
2 1/2 cups all-purpose flour
1 tsp. salt
2/3 cups butter flavored Crisco
1/4 cup butter cut into bits
3 oz. Cream Cheese (usually I leave this out)
5-6 Tbsp. Ice water ( I usually use 6)


Pie Filling:
Mix:
1 1/2 cups white sugar
2 "heaping Tbsps." flour (anykind)
Into a heavy medium saucepan. mix enough to "mash" out the lumps of flour and even out the sugar/flour batter.
In a 2 cup measurer mix:
1 1/2 cups milk
3 egg yolks
Add to above mixture. Add:
Dash of salt
1/3 stick of oleo or butter

Mix, flour salt, Crisco, butter and cream cheese until it looks coarse - like meal. Add ice water - all 6 Tbsp. on at a time and mix until it holds together. Divide this ball into halves and place in zip lock sandwich bags and pat out in disc form prior to allowing all air to escape. Chill at least 2 hours. may stay in refrigerator for at least a week prior to using.
Place outside refrigerator for 15 minutes prior to using. Roll out and place in pie plate. Bake at 450º for 12 minutes with foil around edges then decrease heat to 400º and remove foil and bake an additonal 10 minutes.

Pie Mix directions:
Cook over medium heat until thick. Place in baked pie shell and top with meringue.

Meringue: More stable add 1 Tbsp. meringue powder to 3 egg whites at foamy stage when mixing for a more stable product and less weeping? This, Also may be purchased @ Amish store.

to make a Chocolate Pie: add 1 Tbsp. to cocoa to the sugar/flour mixture. Purchased cocoa from the Amish stores is a more desirable product and produces a better product.
To make Peanut Butter Pie: In an additional bowl mix appx. 3 - 4 tbsp.peant butter with 1 cup powdered sugar using a hand blender. Add approximately 1/2 of this mixture on bottom of baked pie shell then pour cooked filling then top the filling with remaining peanut butter mixture before adding meringue. To make Banana Cream Pie: Put cut up bananas on bottom of baked pie shell and top with cream filling.
To make Coconut Pie: Add approximately 1/2 to 3/4 cup coconut to cream pie filling.
