2 bunches small carrots
1 Tbsp. lemon juice
1/3 c. sugar
1/2 c. water
1 tsp. salt
2 Tbsp. butter

Directions:
Directions:
Peel carrots, cut in 1/4ths lengthwise and place in a heavy skillet. Add remaining ingredients, and cover. Cook over low heat, turning often until tender and glazed. Serves 6.

Variation: Add 2 dozen pearl onions and 3 strips bacon, cooked, drained, and crumbled OR 1/2 c. mayonnaise, 1/4 c. soy sauce, 2 Tbsp. lemon juice, salt & pepper. Cool carrots before combining.
