2 med. potatoes
3 slices fried bacon
1//3 c. chopped onion
1 T flour
2 or 3 t. sugar
3/4 t. salt
1/4 t. celery seeds (or chopped celery)
dash of pepper
1/3 c. water
3 T. vinegar
Directions:
Directions:
Boil potatoes in jackets, then peel and slice thinly. Fry bacon, drain and crumble. Saute onion in bacon fat until golden brown. Blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat.

Stir in water and vinegar. Bring to boil, stirring constantly. Boil 1 minute. Stir potatoes and crumbled bacon in carefully. Remove from heat. Cover and let stand until ready to serve
