l large head Romaine lettuce
1 cup chopped celery
1 tbsp minced parsley
2 sliced green onions with tops
11 oz drained mandarin oranges

Sweet and Sour dressing
1/2 cup tarragon wine vinegar
1 tsp tarragon leaves
1/2 tsp salt, 1/8 tsp black pepper
3 tsp sugar, 1/2 tsp Dijon mustard
1 cup vegetable oil
1/6 cup toasted sliced almonds

1. Wash and dry the lettuce, removing all the water from the leaves. Chill to crisp
2. When ready to serve, break the lettuce into bite size pieces. Add the celery,
parsley, onions and oranges and toss.
3. To make the sweet and sour salad dressing, place tarragon leaves, salt,
pepper, sugar and Dijon mustard into a small mixing bowl.
4. Using a small wire whisk, beat the vinegar into the spices until thoroughly
mixed.
5. Sprinkle the toasted sliced almonds on top of the salad.
