Mix together and set aside:
1 and 1/2 dozen eggs
1 point half and half
Pepper
1/2 tsp dry mustard
Unseasoned croutons or English Muffin toasting bread
Shredded Cheddar cheese
Choose from the following: diced ham, diced turkey ham, browned pork sausage, onion, green pepper, mushrooms, shredded cheese, bacon.

Mix eggs, half and half, pepper and dry mustard together and set aside.
Spray or butter bottom of 9 x 13 pan. Place unseasoned croutons on bottom of pan. May use English Muffin toasting bread, torn in small pieces.
Choose from the following: diced ham, diced turkey ham, browned pork sausage, onion, green pepper, mushrooms, shredded cheese, bacon, and put over croutons. Pour egg mixture over and top with some shredded cheddar cheese. May be mixed the night before and kept in refrigerator.
Bake in a 350º oven for 45 minutes.

This is a great make ahead for overnight guests or a brunch. Possible combinations are: Ham and Cheese, Sausage and Cheese, Ham, Green Pepper and mushroom, May also serve with salsa.
