2 dozen Mrs.T's Potato & Cheddar Cheese Pierogies
1 tbsp olive oil
12 oz fresh mushrooms thinly sliced
1 small onion chopped
1 can (14-1/2oz) can whole tomatoes coarsely chopped
1 tsp salt
1 tsp pepper
1 tbsp Italian seasoning
1/4 cup grated Parmesan cheese

Directions:
Directions:
In a medium saucepan, heat oil. Add mushrooms, onion, garlic, tomatoes, salt, pepper and Italian seasoning. Cook on medium low heat 30 minutes, or until tomato-mushroom sauce has a creamy texture.

Cook Pierogies per package directions. Transfer pierogies to serving dish and top with sauce. Toss gently and sprinkle with Parmesan cheese.
