2 T oil
1 T flour
1 14 oz. can of vegetable broth
1 8 oz. can of tomato sauce (some markets have a "hot, mexican style" tomato sauce that can be used)
1/2 cup chopped onions
2 cups fresh spinach or one cup frozen spinach thawed and drained well
1/2 cup diced tomatoes
1/2 tsp. garlic powder
1/2 tsp. cumin power
1/4 tsp. oregano
salt and red chili powder to taste
1/2 tsp. sugar
corn tortillas (larger size)
refried beans
shredded cheese - Colby, Jack or Mexican mix
sliced black olives for garnish
chopped cilantro

Heat oil. Add flour and mix with a whisk until it is smooth with no lumps. Add broth and again stir until smooth.

Add tomato sauce and stir. Add water and mix well. Cover and let come to a boil. Stir occasionally. Increase heat to let sauce thicken. Watch it so it does not burn.

In a separate pan, add 1 tsp olive oil and add onions. Cook on medium high heat until onions are translucent. Add spinach until fresh spinach wilts or thawed spinach is mixed well with onions. Add a pinch of salt

Wrap tortillas in damp paper towel and put in the microwave for about 2 minutes.

Spray 9" x 13" dish lightly with oil. Put a thin layer of sauce over the bottom of dish.

Coat tortilla lightly with enchilada sauce. Take some refried beans and put it down the center of the tortilla. Add a layer of the onion/spinach mixture.

Put shredded cheese on top. Put some chopped tomatoes and cilantro on top. Roll enchilada and put in dish seam side down.

Put remaining sauce over top of enchiladas. Put more shredded cheese and some sliced black olives on top.

Preheat oven to 400 degrees. Cook uncovered for about 20 minutes.

Note: This recipe has you making the enchilada sauce. If you want to use a prepared sauce, we recommend Trader Joe's bottled enchilada sauce as very good.
