7 cups whole milk
1 ½ cups cornmeal
2 tbsp. sugar
2 tbsp. baking powder
2 or 3 eggs
onions and bacon (optional)
salt and pepper (to taste)
mixed spices (very little if you choose - I use about ¼ tsp. of allspice)

Directions:
Directions:
1) Heat milk (do not boil)
2) Add salt and pepper to taste
3) Fry bacon and onions (optional)
4) Combine, cornmeal, sugar, baking powder, and spices together.
5) Add cornmeal mixture slowly to the hot milk – stirring frequently
(make sure your pot is big enough as the baking powder makes this rise up very fast)
6) When cornmeal is thickened add 2 well beaten eggs.
7) Pour into a greased 9 x 13 pan.
8) Bake at 350 for 1 hour (or until a knife comes out clean).

DO NOT COVER WHEN BAKING

You may want some grated cheese on top. Also instead of the bacon and onions in the mix you can spread it on top.
