1 lb ground beef (lean)
1 medium onion
8 oz sharp cheddar cheese
2 small cans chopped green chilies (Hatch is best)
2 small cans sliced black olives
1 can large tomato juice
1 Tb cider vinegar
3 Tb white flour
1 dozen flour tortillas
salt & pepper to taste

Directions:
Directions:
Fry beef & onions. Heat tomato juice & vinegar, adding flour to thicken sauce (mix flour with a little water, add slowly while whisking).
Dip one tortilla into sauce halfway up and lay flat on plate. Add some meat, green chilies, olives & cheese, & roll up. Place in baking pan. Repeat until all twelve tortillas are in pan. Ladle with remaining sauce and sprinkle with remaining cheese (or grate some more).
Bake at 350º for about 30 minutes. Cheese should be well melted and sauce bubbling up around enchiladees ("Arkansaseez" for enchilada ala Billie Charolene Blevins Thomas, or Oma to Wendy & Heather.
Liberally apply Louisiana hot sauce when you get 'em on your plate!

This recipe came from Wendy & Heather's Oma (my ex-mother-in-law). Actually it came from Oma & Opa's friends Jerry & Weldon. Oma being from Arkansas wasn't well versed in mexican lingo and called them "enchiladees." I found it rather endearing. I loved her and missed her in my life, but I have many warm memories. Her fried chicken was the best ever, and "streak eye" gravy with pork chops and mashed potatoes was something. Don't have the recipes for those, too bad.
