Ingredients: 12 oz. ground turkey 1 garlic clove, finely chopped 2 tbsp. finely chopped fresh parsley 1 egg, lightly beaten all-purpose flour, for dusting 3 tbsp. olive oil 1 onion, finely chopped 1 celery stalk, finely chopped 1 carrot, finely chopped 14 oz. canned tomatoes, strained 1 fresh rosemary sprig 1 bay leaf 12 oz. dried pasta (penne,rigitoni...) salt and pepper fresh Parmesan cheese mixed baby green salad salad dressing of choice

Directions:Put the turkey, garlic, and parsley in a bowl and mix well. Stir in the egg and season to taste with salt and pepper. Dust your hands lightly with flour and shape mixture into walnut-size balls. Lightly dust each meatball with flour. Heat the olive oil in a pan. Add the onion, celery, and carrot. Cook over low heat, stirring occasionaly, for 5 minutes. Increase heat to medium, add meatballs, and cook turning frequently 8-10 minutes, until golden brown. Pour in tomatoes, add rosemary, bay leaf, salt and pepper (if desired), and bring to a boil. Lower heat, cover, and simmer gently, stirring occasionally, 40-45 minutes. Remove and discard the herbs. Just before the meatballs are ready, bring a large pan of salted water to a boil. Add pasta, return to a boil, cook according to package directions. Drain and add to the pan with meatballs. Stir together gently, then serve immediately with freshly grated Parmesan. Serve mixed baby green salad with choice of dressing. |
