2 c. sugar,
1 1/2 c. cooking oil,
4 eggs,
3 c. grated raw carrots,
2 c. flour,
1 tsp. salt,
2 tsp. soda,
2 tsp. baking powder
2 tsp. cinnamon
2 tsp. vanilla
1 can drained crushed pineapple
1 c. chopped nuts
1 can (15 oz) drained crushed pineapple (optional)

Directions:
Directions:
Mix sugar and oil; add eggs separately and beat after each addition. Add carrots and vanilla, then dry ingredients and nuts. At this point I add a can of drained crushed pineapple and pour into a sheet cake pan (13 x 15) or similar flat pan. Bake at 350º approximately 1 hour.

Cream cheese frosting: 1 pkg. powdered sugar, 1 8 oz. pkg. cream cheese, 1/2 stick margarine, and 1 tsp. vanilla
