2-½ c. sifted self-rising flour
1-½ c. sugar
¾ c. shortening
1 c. milk
1-½ tsp. Vanilla
5 egg whites
2-½ c. frozen coconut divided
1 can cream of coconut
16 oz. Cool Whip

Directions:
Directions:
Grease and flour a 9x13 pan. Preheat oven to 350 degrees F.
Mix flour, sugar, shortening, milk, vanilla, egg whites, and half of the coconut in mixer bowl. Beat on low for 2 minutes then on medium for 2 minutes.
Pour in 9x13 pan and bake for 30-35 minutes. Cool for 10 minutes and then punch holes in the cake and pour cream of coconut over it. Cool completely. Spread Cool Whip on top and sprinkle with remaining coconut. Refrigerate.
