1 cup onions finely diced
1 cup celery finely diced
1/2 cup butter (approximate) enough to cook onion and celery
10 cups dry bread crumbs (1 inch pieces)
3-4 cups potato mashed at room temperature (with out milk or butter)
1 tsp thyme
1 tsp sage
1 tsp savory
1/2 teaspoon ginger
salt and pepper to taste

For a healthier version substitute chicken broth for the butter and just add a tbsp or 2 of melted butter at the end

cook onion and celery on medium heat until onions are clear & celery is soft

add spices and cook a few minutes on low heat to incorporate the flavors

mix bread crumbs and potato together and stir in onion & celery mixture until thoroughly combined

This is enough for about a 11 lb turkey,

It would not be Thanksgiving or Christmas dinner for my guys with out this stuffing.

I always reserve some of this stuffing before the turkey is stuffed and freeze it for later uses such as stuffed porkchops, chicken breasts or pork tenderloin.
