1 lb. frozen blacked-eyed, crowder, zipper peas (whatever your favorite, I prefer McKenzieİ
1 1/2 tsp. olive oil
1 tsp. salt
1/2 medium onion, peeled and left together
2 c. water

Directions:
Directions:
In medium boiler, put in all ingredients. Bring to slow boil and cook uncovered for first 10 minutes. Then cover and cook on low heat until tender, approximately 20 minutes. Watch, you may need to add additional water, making sure you have plenty of pot liquid.
