2 cups flour
1 cup cut up raw cranberries
¾ cup sugar
½ cup chopped nuts
1 ½ tsp. baking powder
½ cup orange & rind or 2 tsp orange peel
1 tsp salt
½ tsp. baking soda
1 beaten egg
2 tbsp. salad oil
¾ cup orange juice
a little cinnamon

Directions:

Sift flour, sugar, baking powder, salt, and baking soda into mixing bowl. Add cranberries, chopped nuts, & orange peel. In a small bowl, mix together egg, orange juice, and salad oil. Add to dry ingredients and stir just to blend together. Do not beat. Mixture looks lumpy. Spoon into a greased 9x6x3 inch loaf pan. Bake at 350º for 50-55 minutes. Test for doneness. Let set 5 minutes on wire rack before removing from pan. (Small loaves-cook 35 minutes or until done)
