2 c. sugar
4 eggs
1 - 15 oz. can pumpkin
1 c. vegetable oil
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. vanilla
pinch of salt
Frosting:
3 oz. cream cheese, softened
1/4 lb. butter, softened
1 tsp. vanilla
1 tsp. milk
2 c. powdered sugar

Directions:
Directions:
Preheat the oven at 350ºF. Mix sugar, eggs, pumpkin, and oil. In a separate bowl; mix the flour, baking soda, and baking powder. Add the flour mixture to the pumpkin mixture all at once. Stir until combined then stir in the cinnamon and vanilla. Pour into a greased bar pan. Bake for 35-40 minutes.
For frosting: Mix all ingredients until smooth. Allow bars to cool completely and frost.

I got this recipe from a friend. It can also be made into a cake using a 9 x 13 inch pan. Bake time lengthens slightly.
