Ingredients: 1 box Vanilla Wafers(crushed into 2 C. of crumbs) 6 T. Butter
1 bag (14 oz.) Caramels 1 can (5 0z.) Evaporated Milk 1 C. chopped Pecans
2 pkgs. ( 8 oz. each) Cream Cheese 1/2 C. Sugar 1 tsp. Vanilla 2 Eggs 1/2 C. Semi Sweet Chocolate Chips

Directions:1. Melt butter in a pan, remove from heat, add vanilla wafer crumbs & mix well. Press the butter-wafer mix into the sides & bottom of the cheese cake pan (crumbs are enough to only go part way up the side of the pan). Bake at 350 degrees for 10 minutes. Remove from oven and cool while doing step 2. 2. Take wrapping off all the caramels. Put caramels in a sauce pan with the evaporated milk. Cook over low heat until caramels are all melted into the milk & it makes a smooth mixture. Pour this mixture on top of the Vanilla Wafer Crust. Sprinkle the chopped pecans on top of the caramel mix. Set aside. 3. In a bowl combine the 2 pkgs. of cream cheese, sugar and vanilla. Mix with a mixer until well blended. Add the eggs. Blend until smooth. Set aside. 4. In sauce pan melt 1/2 C. chocolate Chips ( I add a little milk so chips won't burn). Mix melted chocolate chips into the cream cheese mix. Pour over pecans. Bake at 350 degrees for 40 min. Let cool. |
