Ingredients: These amounts are all estimates, pretty much everything is to taste:
2 whole eggs 1 C Olive Oil or half vegetable oil for less olive oil taste (why anyone would do that is beyond me) more oil for thicker or less for thinner
Juice 1/2 Lemon 1/8t Salt 1/4t Black pepper 1/4t Mustard powder, I sometimes add more, and never felt it was too much.
2T finely chopped onions 1/4C Fresh Basil chopped with a knife 1/4C Fresh Spinach chopped

Directions:Whip eggs in blender, then SLOWLY dribble in the oil through the top to build the emulsion to the desired thickness. This stage will be thicker than the final product. It can get messy so always use the top.
You can blanch the greens in boiling water for 10 seconds, but usually I just pour a tea kettle over them in a strainer. Then squeeze all the liquid out, really squeeze or else the liquid will thin the sauce too much.
Add the greens and seasoning in the blender until everything is well mixed. |

Notes: It can be served right away but seems to have the best flavor in an hour or two. It lasts at least a week, but my wife always finishes it before it goes bad so I don't know how long it would last.
Flavored mayonnaise is one of those fun sauces that works well with a lot of things. Hot peppers for barbecue, fresh horseradish for roasts, fresh garlic for vegetables. If it wasn't so fat and calorie laden I'd use it more.
