Wondra flour

Directions:
Directions:
Put Wondra flour in microwave safe bowl. Microwave for 2 minutes before stirring. Flour can be microwaved for 2 minutes at a time until it begins to brown. After flour begins to brown only cook for 1 minute at a time before stirring. Cook until flour reaches the desired browness. Flour will continue browning after being removed from microwave and should continue to be stirred occasionally after being removed from microwave.

This can be made in advance and stored in refrigerator. When making a recipe calling for roux add liquid to pot and add desired amount of roux.
