1 lb Northern Beans
Water or Stock or 1/2 Water and 1/2 Stock
2 Stalks of Celery Chopped
2 Carrots Chopped
1 Onion Chopped
2 Cloves of Garlic Chopped
2 Plum Tomatoes Chopped
Hot Pepper Flakes to Taste
1 Tbsp Sweet Paprika
1 Tbsp Dried Mint
1/2 Tsp Sugar
Salt (to taste)
Pepper (to taste)
1/2 or 1/4 Cup Olive Oil

Directions:
Directions:
Soak beans over night in water. Put enough water to cover beans about 3 inches and then soak them overnight. Rinse beans and put them in a pot with just enough water to cover them. Boil for 30 minutes until the beans are tender. Add celery, carrots, onion, garlic, spices and sugar to the pot and continue to boil until vegetables are tender about 30 minutes. At this point if you need to add some more water go ahead. Depends on how thick you want your fasolada. Now add the tomatoes and continue to boil for about 15 minutes. Now stir in 1/2 or 1/4 cup olive oil. Don't forget to serve with the crusty bread.
