Ingredients: 1 Cup Warm Water 115˚ - 120˚
2 1/2 Pkgs Yeast
1 Tsp Sugar
2 Cups Warm Milk
2 Sticks Butter
6 Eggs
2 3/4 Cups Sugar
1 Orange Rind (one orange)
1 Lemon Rind (one lemon)
2 Tsp Rounded Mouxlepe (purchased at the Greek store)
1/2 Package Sifted Flour (1/2 of a 5 lb bag of flour)
1 Tsp Salt
One Egg Yolk
Half & Half Cream

Directions: |
Directions:Take the cup of warm water and dissolve the yeast with the sugar.
Put milk and 1 1/2 stick melted butter together in a bowl. The other 1/2 stick melted butter is for your hands.
Beat the eggs and sugar until very creamy. Incorporate the orange rind, lemon rind and mouxlepe. Now gradually add the warm milk and butter mixture and then add the proofed yeast and 1 teaspoon salt.
Sift 1/2 of a 5 pound bag of flour and mix wet ingredients with dry. Add flour as needed.
Knead with greased hands. Put in a greased bowl to rise double or triple the size.
Punch dough turn in bowl and let rise again.
Punch dough and then make your shapes. Put in pans to double in size.
Brush with egg yolk and Half & Half cream.
Bake at 350º for 20 min., and then check if they need to cook some more. |

Notes: My mother and I would spend the whole day together making the Tsourekia. The house when these bake smells so good. At the end of the day we would sample the Tsourekia with some café.
