Directions:
When I bake chicken, I rinse it, pat dry, shove quartered onions in neck and cavity areas, loosen skin, shove pieces of onion and butter under skin, rub all over with butter, then salt and pepper. I make a tent with a piece of foil and place it over breast to keep it from getting too dark. Bake at 350º, can't remember time, I just keep an eye on it, spooning drippings back over chicken and remove tent when the legs start getting dark.
