1 cup brown sugar
3/4 cup kosher salt
1 non-chlorinated gallon water
one onion sliced
sliced lemon and oranges
sprinkle with Italian spices and garlic


Directions:
Directions:
Soak fish with skin on in solution over night
remove, rinse fish
Pat dry the fish and lay on a towel. expose to moving air (fan) till film on fish
Melt butter and spread over the fish. sprinkle with kosher salt
place in smoker and smoke until golden brown]
Remove and cool.

I use flavored wood for smoking,. apple or hickory. I also use this wood with flared pellets
