4 ripe avocados
1 medium onion (I like red onion) diced
3 cloves garlic, minced
2 Tbsp chopped cilantro
2 jalapenos diced
juice of 2 limes
salt and pepper

Directions:
Directions:
Cut avocados in half, remove pit, place meet in bowl and discard skin. Add onion, garlic, jalapenos, chopped cilantro and lime juice. Gently mash mixture with a fork, or vegetable masher. Then taste for seasoning, stir with rubber spatula. Leave the mixture chunky. Cover and refrigerate until ready to serve

You can add or subtract any of the ingredients depending on your tastes. Some people return the pit to the mix to prevent it from turning dark. Keeping the mixture from over oxygenating is the key. Using plastic wrap to cover the mixture and up the sides of the bowl works well. To speed the ripening of the fruit, store the avocados in a brown paper bag in a warm place. You can also put bananas in the bag. There are also people who put them in a flour canister overnight!
