4 boneless, skinless chicken breasts
1/2 cup teriyaki marinade/sauce
1 11 oz can corn, drained
1 15 oz. can black beans, drained and rinsed
1/2 cup chopped red bell pepper
1/2 cup green bell pepper
1 avocado, peeled, cubed
1/2 medium cucumber, quartered, thinly sliced
1 medium tomato, cubed
1 ripe mango, peeled, cubed
1 cup shredded cheddar or cheddar/jack cheese
1 tsp olive oil
4 tsp red wine or rice wine vinegar
juice of 1/2 lime
dash of garlic salt
4 cups tortilla chips (Tostitos hint of lime are great with this)
6 cups green leaf or romaine lettuce, torn into bite-sized pieces
ranch dressing

Directions:
Directions:
Cut up chicken into big chunks and marinate at least an hour and cook. Grill, bake, or in a pan with a little extra marinade.

Combine the following: corn, beans, peppers, avocado, cucumber, tomato, mango, oil and vinegar.

Assembly: put chips on the bottom of your plate. Top with lettuce, then mango/bean/veggie mixture, then chicken , a little cheese, and ranch dressing. Eat!
