Cooking oil (Canola Oil)
½ of a whole chicken
Salt and Pepper to taste
2 stalk celery
2 medium carrot
1 small onion, peeled
1 bay leaf
3 cans (14.5 oz) low sodium chicken broth
3 tbsp all purpose flour
¼ cup cold water

Directions:
Directions:
1 batch of your favorite waffles
Heat oil in a stew pan over high heat
Sprinkle both sides of the chicken with salt and pepper to taste.
Add to pan and brown both sides
Add celery, carrot, onion, bayleaf and broth.
Reduce heat to low
Cover and simmer until chicken is tender about 10 min
Remove chicken from pot cool remove fat and bones pull apart into small pieces
Skim excess fat from broth discard the vegetables (or eat as a cooks treat)
Mix flour with the water until smooth
Bring the broth to a slow boil
Add the flour and water gradually stirring rapidly after each addition
Continue until gravy is the desired thickness. Taste for seasoning
Add the chicken and keep warm over low heat.
