2 pounds fresh asparagus
12 ounces Prosciutto di Parma
2 quarts water, for boiling
1 tbsp. kosher salt
ice water, for shocking
2 tbsp. butter, melted
1 tsp. freshly ground black pepper

Directions:
Directions:
Bring 2 quarts of water to a rapid boil, then add kosher salt. Cut the woody ends off the asparagus. Add the asparagus to the boiling water and cook for 4-5 minutes, DO NOT OVERCOOK. Remove the spears from the boiling water and immediately submerge in the ice water bath to stop cooking and preserve the green color. After 5-7 minutes in the ice water bath, place spears on a paper towel to remove excess water. Brush on melted butter. Depending on the length of the prosciutto slice you may decide to cut the slice in half, then wrap the spear in the slice of prosciutto and arrange on the serving plate. Once all the spears are wrapped, sprinkle with the black pepper. Enjoy!
