1 cup short grain brown rice
2 cups stock + 2 T vegetable stock or Imagine No-Chicken Stock
1 can black beans
1 1/3 cup green peas, frozen or fresh (optional)
1 small yellow onion, diced
1 container of button mushrooms, diced
2 cloves garlic, sliced
2 T olive oil
1/4 cup nutritional yeast
pinch of the following, dry or fresh:
salt, pepper, basil, marjoram, oregano, rosemary, thyme
1/2 cup refined coconut oil or enough to pan fry the patties

Directions:
Directions:
Cook the rice according to directions, using the 2 cups of stock in place of water.

In a saute pan, add olive oil and cook onions until soft, about 5 minutes, then add mushrooms, garlic, and salt and continue cooking another couple of minutes.

Add peas and cook 1 more minute. In a large bowl, mix the rice with the onion/mushroom mixture and the black beans.

Add the nutritional yeast, spices, and remaining stock if the mixture feels too dry.

In a food processor, pulse mixture for 1 minute. Form mixture into patties, according to your size preference.

In a large saute pan, heat coconut oil on medium-high flame until hot, then add patties and cook 2-4 minutes per side according to preference of browning.

Repeat as necessary until all patties are done. Place on paper towels to absorb excess oil.
