Madeleine Pan
2 large eggs
2/3 C sugar, 1 t vanilla extract
1/2 t grated lemon peel, 1 pinch salt
1 C all purpose flour
10 T unsalted butter, melted, cooled lightly
powdered sugar

Directions:
Directions:
Preheat oven to 375º. Generously butter and flour pan for Madeleines.
Using an electric mixer, beat eggs and 2/3 C sugar in large bowl just to blend. Beat in vanilla, lemon peel and salt. Add flour; beat just until blended. Gradually add cooled melted butter in steady stream, beating just until blended.

Spoon 1 T batter into each indentation in pan. Bake until puffed and brown, about 10-16 minutes. Cool 5 minutes. Gently remove from pan. Repeat process, buttering and flouring pan before each batch. Dust madeleine's with confectioner's sugar.

Madeleine Pans are beautiful - so that was the impetus for me. These are the absolute best when they just come out of the oven. There are variations on this recipe, including orange flower water or rosewater which can be found in specialty cooking shops. If using the flower water, eliminate the lemon and add 2 t of the orange flower water or 1 T rosewater.
