1/2 pkg. frozen puff pastry dough
1/2 lb. Cambozola cheese
2 ripe Anjou or Bose pears
2 tsp. cornstarch

Directions:
Directions:
Thaw pastry according to package directions. Preheat oven to 500ºF. Slice cheese into 1/4" slices. Peel pears and slice lengthwise into quarters. Cut out cores. Slice each quarter into thin wedges. Place pears in a large bowl. Sprinkle cornstarch over top, then toss until evenly coated. Roll pastry into a circle - 12" wide. Gently lift and place in a 9" springform pan. Fold edges down toward pastry bottom forming a lip about 1/2" high. Firmly press pastry into sides and bottom of pan.
Place half of cheese slices over bottom of pastry. Arrange pears over top in concentric circles overlapping as needed. Place remaining cheese on top. Reduce oven to 375º. Place pan on bottom rack and bake until cheese and pears are highly browned, 35 - 45 minutes. Remove from oven. Let stand 15 minutes before slicing.
