2 c. sugar
6 eggs, separated
2 tbsp. cornstarch
1 tbsp. flour
1/8 tsp. salt
1 pt. cream
whole milk to complete a gallon
2 tbsp. vanilla
1 tsp. orange or lemon extract, if desired

Directions:
Directions:
Mix sugar, cornstarch, flour and salt. Add enough milk for a custard (3 cups). Put milk in egg yolks and strain. Cook and bring to boil for 2 minutes. Cool before freezing. Add cream and enough milk to finish a gallon (2 1/2 qts.) For less rich ice cream, add 1 can evaporated milk then finish with whole milk.
To add fresh fruit, add 1/2 pt. cream.
