2 cups apples, peeled and diced
1 cup milk
2 cups self-rising flour
3 Tbsp melted butter
1/2 cup brown sugar
1 tsp cinnamon
2 large eggs

Directions:
Directions:
Mix the flour, sugar and cinnamon together. Break up any lumps. Add in the milk, melted butter and eggs. Stir well to combine. Stir in the apples. Drop by tablespoons (I used a small cookie scoop) into hot oil. Brown, turn on the other side. Serve with apple butter.

If you use Crisco or "lard" they will stay crispier longer.

You can exchange sugar for Splenda. Use one to one exchange (one cup for one cup).

There is something called "Ideal" which is actually xylitol - sugar substitute okay for diabetics, etc.. It bakes well and really can't tell a difference in most things.

Ideal makes a product that is brown sugar with no sugar in it and no after taste. That is what I use. It is made with Xylol (sugar alcohol) so it doesn't play with your blood sugar.
