1 can of Red Sockeye Salmon (bones removed) and flaked
1 egg
1/4 cup seasoned bread crumbs
1/2 lemon
1/4 tsp salt
1/8 tsp pepper
olive oil

White Sauce

2 Tbsp butter
2 Tbsp flour
1 1/2 cups milk
salt and pepper
1 4 oz. can English peas or 4 oz. frozen English peas

Directions:
Mix flaked salmon, egg, bread crumbs, lemon juice, salt and pepper. Shape into 4 to 6 patties and pan fry in olive oil about 5 to 7 minutes per side.

White Sauce

Melt butter in sauce pan. Stir in flour, and add milk and seasonings. Heat and cook peas and add to sauce. Pour over salmon patties and enjoy.

I use flour and a large onion in my Salmon patties. Then I use hot sauce on them. No white sauce and no peas.

We also like this recipe made with tuna fish.

I just substitute tuna for the salmon. If you don't like the white sauce, you can substitute cocktail sauce.

I like using white corn meal instead of the bread crumbs. I also saw a recipe which was basically crab cakes but using canned tuna and eating it in place of hamburgers.

I have always used cracker crumbs to make salmon patties, I'll give the corn meal a try.

Instant potato flakes work in them as well. I think Jerry substitutes mackerel for the salmon sometimes.
