3 pounds red potatoes, peeled and diced
1/2 onion, chopped
1/2 cup chicken broth
1 cup chicken broth
2 cups water
1/2 stick butter
1/2 cup all-purpose flour
2 cups milk
1 cup Velveeta cheese, cut into small chunks.

Directions:
Directions:
Combine potatoes, onion, celery, chicken broth and water. Bring to boil, then lower heat and simmer 15 - 20 minutes. In a heavy sauce pan, melt butter. Add flour and stir until smooth. Cook one minute, stirring constantly. Gradually add milk and cook until it begins to thicken. Add Velveeta and cook until it melts, stirring constantly. Add to the potatoes and simmer until ready to serve. You may add more milk if the soup appears to be too thick.
