Ingredients:  
1 (12 oz) can of whole kernel corn
1 ( 19 oz) can of black beans- drained and rinsed
1 red bell pepper
1 small onion- chopped
5 cloves of garlic- minced
1/3 cup of olive oil
1/4 cup lemon or lime juice
3 tbsp cider vinegar
1/2 tsp salt
1/2 tsp ground black pepper
4 avocados - peeled, pitted & diced
bundle of fresh cilantro


Directions:
Directions:
In a large bowl, mix together corn, black beans, red pepper and onion.

In a small bowl, mix together onion, garlic, olive oil, lime/lemon juice, cider vinegar, salt and pepper. Pour onto the corn mixture and toss. Cover and chill in the refrigerator ( can be done right before serving or overnight.

Stir in avocados and cilantro ( a handful or more to taste) before serving.
