1/2 C vegetable oil
1 C packed brown sugar
3 large ripe bananas (I've used 4 what else to do with the spotted, soft banana that no one will eat?)
2 C unbleached white flour
1 t baking powder
1 t baking soda
1/2 t salt
2 t pure vanilla extract
1/2 C chocolate chips (optional)

Directions:

Preheat oven to 350º. Oil or spray or use muffin liners for 12 muffins

Either with a mixer or by hand, beat the oil, sugar, eggs and mashed bananas until well blended. Sift together the flour, baking powder, baking soda, and salt. Fold the dry ingredients into the wet with quick strokes - be careful not to overmix. Fold in the vanilla and chocolate chips, if using.

Spoon into muffin tins and bake for 20 minutes. Turn muffins to cool.
