Graham Cracker Crust:
6 graham crackers
2 T butter
pinch of cinnamon

Cake:
1 1/2 lbs cream cheese
1 1/2 C packed brown sugar
3 eggs
2 C cooked pumpkin puree (15 oz. can)
1 C sour cream
1 t ground cinnamon
1/2 t ground ginger
1/2 t ground nutmeg
1/2 t salt
1 t pure vanilla extract

Preheat oven to 350º

Butter and oil and spring form pan. Crush 6 graham crackers and put into a cuisinart (if you have one, if not, crush in a plastic bag til fine and place in a bowl.) Add 2 T softened or melted butter and a pinch of cinnamon. Process for about 30 seconds until clumped together. Place firmly on bottom and up a bit on the sides of the pan.

Cream together the cream cheese and brown sugar until smooth. Add the eggs one at a time, beating well and scraping the sides of the bowl after each addition. Add the pumpkin, sour cream, cinnamon, ginger, nutmeg, salt and vanilla and beat until well blended.

Pour the filling into the pan and bake for about an hour, until the edge is firm and the center still jiggles. Allow to cool at room temperature and then chill well. Remove the sides of the springform pan just before serving.

This is a Thanksgiving dessert at our holiday - not every year - and i think once a year is enough! It's good but intense.
