4 Tbsp unsalted butter (plus extra for pan)
1/2 chopped red onion
fresh ground black pepper
Salt
2 cloves garlic minced
1 tsp red chili flakes
1 3/4 c heavy cream
1 tsp ground nutmeg
1 c shredded Parmesan cheese
1/2 c sour cream
2 (10oz) pkg of frozen chopped spinach thawed and squeezed dry
1/2 c pkged fried onions(French's)

Preheat oven to 375º. Butter an 8x8 baking dish.
Melt butter in a skillet over med-high heat, add onion and a pinch of salt. Saute for 3 minutes then add garlic and red chili flakes. Saute for 2 minutes and add cream, Parmesan and nutmeg. Heat until cream is bubbling. Turn off burner and stir in sour cream and spinach. Salt & Pepper to taste. Place in baking dish and top with fried onion. Bake until golden and bubbly 15-20 minutes.
