3 eggs
1c oil
2 c sugar
2 tsp vanilla
2c shredded zucchini
4 oz apple sauce
5 oz OJ
3 c flour
2tsp baking soda
1/4 tsp baking powder
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1c nuts
Directions:
Directions:
mix eggs, oil, sugar & vanilla until thick
stir in zucchini, applesauce & remaining ingredients.
grease 2 - 9x5 loaf pans
bake at 350º about an hour until toothpick comes out clean
