2 lbs granny smith apples
2 lbs of braeburn or cortland apples
1tsp ground cinnamon
3/4 cup of granulated sugar
1/2 cup of butter (1 stick)
1 cup firmly packed light brown sugar
1 pckg of two refrigerated pie crusts
1 egg white
2 tbsp granulated sugar for top of crust

Preheat oven to 350. Peel apples and cut into 1/4 wedges and toss in a bowl with the 3/4 cups of granulated sugar and cinnamon. Set aside. In 10" cast iron skillet melt the butter over medium heat. Stir in the brown sugar and stir while it dissolves for about two minutes. Remove from heat and set one of the pie crusts on top of sugar/butter mixture. Don't press down. Just apply very light pressure as you place it on mixture. Next pour apples onto crust, heaping it slightly in the middle. You may not use all of your apples. I think I used a total of about 8 apples. place the second crust on top of the apples and press down gently around the edges/not too hard or the sugar mixture will spill over the sides. Make a few slits on the top of the pie to let steam escape while cooking. Beat egg white for a couple of minutes until a bit frothy. Brush this on top and sprinkle with the remaining granulated sugar mixture. Bake for about 50 minutes until crust is a golden brown. Ovens vary so it could take a bit longer.

This is, hands down, the best apple pie I have ever tasted. I made for our family three times the first week I found the recipe in Southern Living magazine. They called for cooking it 60 to 70 minutes which would have burned in my oven.
