2 2/3 C unbleached white flour
2 1/2 t baking powder
1/2 t salt
1 C butter at room temperature
2 C sugar
4 Eggs, separated
2 t pure vanilla extract
1 t pure orange extract or i use 1 T orange concentrate
1 C orange juice
1 C fresh orange juice

Orange Frosting
1/2 C butter at room temperature
3 C confectioner's sugar
3 to 4 T fresh orange juice
1 T freshly grated orange peel

Preheat oven to 350º Lightly oil and dust cake pans or put liners in cup cake pans (24)

Sift together (i don't ever sift - i just go light), baking powder, and salt. In a large bowl, cream butter, sugar until smooth and light. Add the yolks one at a time, beating well after each addition. Add the vanilla, orange extract or orange juice and grated orange peel and beat well. Beat in the flour and orange juice alternatively in thirds. In a separate bowl, beat the egg whites until stiff but not dry and gently fold them into the batter.

Spoon the batter evenly into the prepared pans or cupcake tins and bake for 30-35 min until edges pull away from the slides of the pan and the top springs back when touched; Less for cupcakes. Run a knife around the outer edge and invert onto a rack and cool completely.

To prepare the frosting, beat the butter until light. Add the confectioner's sugar, 1/2 C at a time, beating well after each addition. Add the orange juice and grated orange peel and beat well. If the frosting is too stiff, beat in more orange juice. if it's too soft or if it curdles, add more sugar.

Frost the cake when completely cool.
