2 lbs ground beef
1 c applesauce
1 c soft bread crumbs
2 eggs
salt and pepper to taste
flour
2 tbsp fat (for browning)
1 stalk celery, thinly sliced
1 green pepper, minced
carrots thinly sliced
1 sm onion, thinly sliced
2 cups tomato juice

Directions:
Directions:
Mix beef, applesauce and bread crumbs together. Add eggs.

Season with salt and pepper.

Shape mixture into small balls, roll in flour and brown in hot fat.

Place balls in a casserole dish.

To drippings in pan, add vegetables and tomato juice. Season with salt and pepper.

Bring to a boil, then pour over meatballs.

Cover and bake in a moderate oven (350ºF) for about 40 minutes.

If desired the gravy can be thickened with a little flour and water paste before serving.
