1 ½ medium, ripe bananas (mashed)
6 T sour cream
1 tsp vanilla extract
1 ½ C all-purpose flour
¾ tsp baking powder
¾ tsp baking soda
¼ tsp salt
¾ C sugar
½ C (1 stick) butter(softened)
1 large egg
1 large egg yolk
½ C mini semisweet chocolate chips

Preheat over to 350º. Grease standard-size muffin tin or line with cupcake papers. Mix together bananas, sour cream and vanilla. In separate container, combine flour, baking powder, baking soda and salt. In mixing bowl, cream sugar and butter at medium speed until light and fluffy. Add egg and egg yolk, one at a time, beating well after each addition. At low speed, alternately add the flour and banana mixtures until just blended. Stir in chocolate chips. Spoon batter into cupcake pan, filling each cup ¾ full. Bake until golden and top springs back when touched lightly, 20-25 minutes. Transfer pan to wire rack and cool 15 minutes, then turn cupcakes out onto rack to cool completely.
