6 slices of bread (cubed)
1 lb regular or hot sausage
1 C grated sharp cheese
6 eggs (lightly beaten)
2 C milk
1 tsp salt
1 tsp dry mustard
½ C chopped green pepper
½ C chopped red pepper
1 medium onion (chopped)
½ lb mushrooms (sliced)
4 T butter (melted)

Directions:
Night before: Cook, crumble and drain sausage. Saute mushrooms, onions and peppers until almost tender. Add the sausage to the vegetables. Layer bread in buttered baking dish. Add grated cheese and then vegetable-sausage mix. Combine milk eggs, salt and mustard. Pour egg and milk mixture over the ingredients in the baking dish. Cover and refrigerate overnight. In the morning, preheat oven to 350º. Bake 45 minutes until bubbly. Serves 6.

Recipe can be doubled or adjusted to number of servings needed. May substitute ham for sausage, or leave out meat altogether for vegetarian version with additional cheese. May substitute other vegetables, or regular mustard if dry not available. If recipe is doubled, add extra baking time. Check after 1 hour, but could take another 20-30 minutes. Check by sticking a knife into casserole – will come out clear when done. Leftovers may be reheated in microwave.
